Kim's Favourites

PARM CHEEZE
2 handfuls of Brazil nuts
2 handful of pine nuts
1/2-1 tsp garlic powder
2 tbsp nutritional yeast
A pinch of mountain salt to taste
Blend well with a food processor
Coodles (spiralized cucumber noodles), veg and parm cheeze on top

CHOCOLATE ICE CREAM SMOOTHIE
Blend in a vitamix blender... 2L
8 ripe bananas
30 or so honey dates
4-5 tbsp cocoa nibs
Fill the remainder with filtered water


RAW TOONA SALAD
Diced oyster mushrooms, celery, red pepper, green onion, mashed avocado, and spices to taste: garlic powder, onion flakes, cumin and fresh dill. On a bed of lettuce and tomato slice.

RAW STUFFED PEPPERS WITH GUACAMOLE

3-4 banana peppers cut lengthwise and deseeded

Stuffing
1 cup walnuts
1/4 cup sun dried tomatoes
2 cloves garlic
1/2 Tbs cumin
Salt/pepper to taste
Add all above ingredients to a food processor and pulse till you have a grainy texture

1 Roma tomato deseeded and diced
3 green onions finely chopped
1 jalapeño pepper deseeded and diced
1/2 cup red cabbage finely chopped
1/2 cup carrots finely chopped
1 Tbs lemon juice
Add all ingredients to a bowl including the ones that you processed and mix together.

Fill peppers with mixture.

Guacamole
2 avocados i
1 med onion
1 Roma tomato
1/4 cup fresh cilantro
1/2 Tbs of lemon or lime juice
Salt pepper to taste


Add to food processor and pulse, I like to leave a little bit of chunks in mine.
